Mr. Vimal Sharma, Director at Bliss Chocolates, is the ‘Willy Wonka’ of our lives and he recently took us on a tour of his chocolate factory to see the entire chocolate making process of “Beans to Bar to Bliss”.
It was literally like we had won the golden ticket because this was no ordinary chocolate factory, but the best in town. And knowing that this was the origination point of those delicious true coverture chocolates that are sold at SMOOR chocolate lounge got us up and active early on a Sunday morning.
We landed there with wide smiles pasted on our faces and got into hair nets and body covers in a jiffy. We probably looked like thrilled puppies ready to jump into a pool, except that we had chocolate pool on our minds. Those who have watched Charlie and the Chocolate factory will know exactly what I mean.
Being food bloggers for the past one year has brought a huge difference in us. Off late we find ourselves being more interested in ‘behind the scenes’ sections compared to ‘on the table’ sections of exploring. So, with cameras, scratchpads and pencils, in we went to explore the world of baking and chocolate making.
We first went through the baking section, where a huge variety of breads are made, right from whole wheat, multi-grain to millets and gluten-free. We watched the dough being hand tossed to get the smoothest texture and grains being sprinkled on them right before they are put into hot ovens. A turn of heads and we saw the older batches raising magically in the ovens. They come out sweltering hot and are laid on huge racks.
Needless to say, the smell of freshly baked bread is like poetry to the nose. It also gives one a pleasing and affirming feeling that there’s food around!
Out of the bread paradise and into the chocolate section, the smell of cocoa drew us in. There’s always a flow in such places. Raw chocolate sourced from various parts of the world, including Ghana, Madagascar and Ecuador, go into a large liquefier that constantly works on converting them into a consistent liquid. I must say watching liquid chocolate flow has to be one of the most meditative sights on earth. Then the consistent mixture goes into various kinds of moulds which are later cooled off and frozen until hard.
This probably makes the entire process sound simple, but there’s a lot of science that goes into it. At SMOOR, attention to detail is of utmost importance. Maintaining the right temperature and keeping the premises free of any other kinds of odour are some of the few things that have a huge impact on the end product.
Did you guys know that chocolate is extremely sensitive to the smells around it and tends to absorb them all? So, preserving and packing them is key and they do it the right way here.
SMOOR makes concoctions of unimaginable ingredients and chocolate. There’s nuts, chilli, caramel, berries, coffee, dry fruits and what not. We ended up sampling one of each and we were high on chocolate by the end of it all.
